March Scrappy News

Good Monday Morning!!!  (It was still morning when I started typing this newsletter)
How are you faring this beautiful and chilly morning?  I hope all is well in your world and that you’re enjoying the sunshine.  Spring is around the corner, has to be!  I am gearing up for some back to back weekends of work…I have some great classes planned, a whole slew of new layout kits using fabulous My Mind’s Eye lines ready to roll and more up my sleeve.  Hopefully, I can squeeze out some extra hours to work on more kits I have lined-up, I’m not holding my breath though.

Layout Kits
My layout kits are all designed by yours truly, agonizing for hours and hours (just kidding), to save you hours of agonizing.  I am introducing 3 kits this month – all using My Mind’s Eye line and all are TWO 2-pagers per kit.  Come by my booth and check them out (sneak peeks on my facebook page as well).  Limited quantities and once I sell out, I won’t be making more. 

Classes
Glimmer Mist 101 was a hit at both Scrap-a-Way and Cool Crops last month.  Glimmer Mist 101 - learn several different ways for coloring backgrounds and embellishments with spray inks.  Each participant will receive a bottle of glimmer mist of their choice plus 20% off products used in class. Class fee is $8.  I will be offering this class at the remainder of my events for this scrapbook season.
Along with the Glimmer Mist class, I will also be offering a layout class.  Mamarazzi Layout class - we will be learning how to use 6x6 paper papers to scrap 12x12 layouts. You will make a ONE and a TWO page layout. Class fee is $10.   I have limited quantities of these products and will be offering this class at Cool Crops Portsmouth 1 and Scrap-A-Way Mystic…sign up by email to guarantee your spot.

Upcoming dates are March 23, April 20 and May 11.  We are at the Prindle Pond Conference Center in Charlton, MA.  Crop fee is $40 and the crop runs from 9am to 9pm. Signature Cocktails

When Cool Crops came up with their Cool Crops Cocktails, I decided that I needed to come up with some signature ribbon cocktails.  My favorite ribbon drink is the pink grapefruit margarita filled with yummy pinks reds and a dash of orange (triple sec) and silver (silver tequila).  These are limited editions and once gone, I won't be making more.

January Scrappy News

First crop of 2013 is over and done with…waving at my friends from Scrap-A-Way Mystic…and I am raring to go.  It’s still insanely busy here at Hiraldo Home Base and I have no clue why.  There just doesn’t seem to be enough hours in the day.  Maybe it’s the cooking daily or the part-time gig I picked up or the knitting I taught myself or pinterest or the kids’ extracurricular activities.  I don’t know what the culprit is but every minute of every day is occupied.  Did you like how I sneaked pinterest in there?  It definitely is a time suck but I love the visual bookmarking, so much easier to remember why I bookmarked that link.
 
Another time suck goes to ohh-ing and ahh-ing over the goodies that just came out at Winter CHA…my faves (faves of faves) are on my Scrappy Products I Love pinterest board.  In fact, I spent a good chunk of time this morning as well as half the weekend at Mystic shopping for and re-stocking  the store.  Boxes have started arriving and everything looks so yummy!!!  I need to get a few more things crossed off my to-do list before I can play…I’ll share when I do.

Busy Hands

We embarked on our annual trip to Florida for the Christmas holidays and this year instead of flying, we drove.  We thought it was high time the boys experienced a road trip...mind you they sit in a plane for a 14 hour flight, what difference does 19 hours in a car make.  But it needed to be experienced so off we went.  I taught myself to knit a few weeks before we left and brought along some things to keep my hands busy...a couple balls of yarn and pair of needles.  While the Mr did the bulk of the driving I knitted and taught the boys how to finger knit.
That wasn't enough though...I wanted to document this trip and thought a mini SMASH album would be the perfect size.  I brought everything in a plastic case...slightly bigger than a pencil box and the album.  We worked on it at stops, our destination and during the drive.  Mostly I had Q&A's and recorded everyone's answers.  I took pictures with my iPhone, edited them using the Pic Stitch app and uploaded them for printing using the Printicular app (prints 4x4 at Walgreens). 
Easy Peasy!!!  A little extra touches when we got home and I have a complete travel journal :)  Have you scrapped on the go?  How did you do it?  Would you like to see more pages in the album?  Leave a comment!

Fall Fever Sneak Peek

I will be teaching this class at Scrap-a-Way Seekonk and Cool Crops Hyannis this month.  We will dry emboss, sand, ink and layer our way to a TWO page layout that will showcase your fall photos.

What's Cooking?

Crockpot Mexican Chicken - Two thumbs up from all of my boys.  We had them for dinner last night as tacos and burritos.  The boys praised it through dinner and were planning their lunches with the leftovers!  Bonus...today is a snow day...no need to worry about re-heating, keeping food warm so I'm going to make quesadillas with the chicken :).  The original recipe bakes it in the oven but I made it in the crockpot.

Crockpot Mexican Chicken
 
Ingredients
1 pound boneless chicken breasts (3 boneless chicken breasts)
1 teaspoon Seasoning for Tacos
Salt, to taste
(1/2 packet of Low Sodium Taco Seasoning)
1/2 cup enchilada sauce (1 can mild enchilada sauce)
4 ounces cheddar cheese, shredded
3 green onions, chopped
cilantro, chopped

Method (this is how I cooked it in the slow cooker)
Place chicken in crockpot and sprinkle the chicken on both sides with taco seasoning.
Pour enchilada sauce over chicken.
Cook on low for 6-8 hours or high for 3-4 hours.
When done, shred chicken.  Sprinkle cheese and green onions on top.
Serve with Mexican rice (I used Zatarain's black bean and rice mix), sour cream, guacamole, and cheese.  Also, flour and corn tortillas.  Enjoy!

Notes:  We have plenty of chicken leftover and will be making quesadillas with it for lunch today.

Store Update
I have been doing a lot of shopping (a tad too much) but there is just too much cool stuff out there.  Also, with the holiday season coming up and the flurry of crafting…if you need packs of a certain paper or cardstock or stickers…feel free to shoot me an email.  If I can get a hold of it, I’d be happy to get you stocked up.
I have also been working hard on re-stocking my layout kits bin and have 5 new layout kits out for sale.  Some are leftover Make-n-Takes, if you wanted to participate in my MnT and couldn’t fit it in, now’s a chance to get my most popular ones – Snow Fun and Spring Blossom.

What's Cooking?

Parmesan Crusted Chicken {Hellmann's Mayo Recipe} ...this recipe is super quick and easy.  I made it for the first time last week and all the boys loved it.  It's on this week's meal plan and will be making the rotation quite a bit.

Parmesan Crusted Chicken
(adapted from Hellmann's/Best Foods)
serves 4

Ingredients:
1/2 cup Hellmann's or Best Food's Real Mayonnaise
1/4 cup shredded Parmesan cheese
4 boneless skinless chicken breast cutlets, about 1 1/4 lbs. total weight or about 5 ounces per breast
4 teaspoons Italian seasoned dry bread crumbs

Instructions:
1.  Place mayo and cheese in a small bowl and mix. 
2. Lay chicken breasts on baking sheet (I line my baking sheet with parchment paper to make clean up easy) and spread mayo mixture evenly atop each. Note: I butterflied each breast to cut down on cook time.
3. Next evenly sprinkle bread crumbs atop each. 
4. Place in oven and bake for 20 minutes or until chicken is cooked thoroughly and juices run clear. Tops will be browned and chicken will be incredibly juicy. You can also finish them off under the broiler for a minute or two to get them extra browned on top.
5. Season with a dash of fresh cracked pepper and sea salt, if desired.  
6.  I will be serving mine with steamed veggies, cranberry sauce and either rice or mashed potatoes.

What's Cooking?

Easy Turkey Soup(another pinterest recipe)...served this to the ladies at our Just Scrappin' Day Crop and it was a hit.  It's Gluten free and Dairy free to boot.  Love how easy it was to make and how tasty it was.  It's definitely going into my recipe box.

Easy GF DF Turkey Soup
Yield: 4 servings
Ingredients:

1 1/2 lb. fresh turkey breast, skin on (used a 4lb breast and 3x the recipe)
3-4 cloves garlic, chopped
Half a red onion, finely dived
2 ribs of celery, trimmed and chopped
4 large carrots, sliced (I plan on one carrot per person)
Half a medium-large winter squash, peeled and cubed (butternut, banana, etc)
Sea salt and fresh ground pepper, to taste
Italian style herbs, to taste (basil, rosemary, thyme, marjoram) (I used an italian blend)
1 tablespoon balsamic vinegar (I used apple cider vinegar)
Fresh cold water, as needed
Fresh chopped parsley, for serving

Instructions: 
Turn the slow cooker on High.

Rinse the turkey breast in cold water and place it in the bottom of the slow cooker. Top with chopped garlic, onion, celery, carrots, squash. Season the goodies with sea salt, pepper and Italian herbs. Add the vinegar. Pour fresh cold water over the turkey and veggies until submerged.

Cover and cook on high until the turkey falls apart using a fork. This could be anywhere from 4 to 5 hours, depending upon the size of your Crock Pot and the size of your turkey breast. 

Remove the piece of skin and discard. Pull apart the the cooked turkey into pieces, using two forks or a big spoon. 

Stir and taste test. Does it need a pinch of sugar to offset the saltiness? How about a little more vinegar to brighten the flavor? Tweak the broth gently with small amounts of sweet, sour and salty until the balance is the way you like it.

If you like your turkey soup spicy, add some hot red pepper flakes!

Serve with a sprinkling of fresh chopped parsley.

What's Cooking

Crockpot Honey Bourbon Chicken (found on pinterest)...made it for dinner yesterday and it was a hit with the boys, all three of them.  Even easier, Walmart sells a 3lb frozen bag of boneless, skinless thigh strips .  Cooked the entire bag but did not double the seasonings...and it still came out perfect.  I served it with jasmine rice, Trader Joe's Thai shrimp gyoza and stir fried green beans.

Crockpot Honey Sesame Chicken

Yield: 4 servings

Ingredients:

1 lb. boneless, skinless chicken thighs, about 5
Salt and pepper
1 cup of honey
1/2 cup of low sodium soy sauce
1/4 cup ketchup
2 tbsp. vegetable oil
2 cloves of garlic, minced
1/2 cup diced onion
1/4 tsp. red pepper flakes
Cornstarch
Sesame seeds

Instructions:

  1. Place the chicken thighs in the crockpot insert and sprinkle salt and pepper on both sides.
  2. In a medium sized bowl, combine honey, soy sauce, ketchup, oil, garlic, onion, and red pepper flakes. Stir to combine well. Pour over the chicken in the crockpot.
  3. Cook on low for 3-4 hours or high for 1 1/2-2 1/2 hours.
  4. When done, remove chicken from stock pot and cut into chunks. Prior to putting the chicken back in the stockpot, combine some cornstarch in water and whisk it into the crockpot to thicken up the sauce a bit. Throw the chicken back in and stir around to recoat the chicken in the sauce.
  5. Serve hot over a bed of white rice (optional) and sprinkle some sesame seeds on top.

Good Morning Ladies!!!

The leaves are turning, the temperature is dropping and the kids are begging for all manners of bizarre Halloween costumes.  I know this newsletter is late but the hours and days just seem to fly right by me.  “Time flies when you’re having fun” – right?  I have to say I am having a blast with this ride called life…hope you are too.

I kicked off the scrapbooking season with a Just Scrappin’ Weekend in Westboro crop and we would like to THANK all the ladies that joined us.  We had a wonderful time in an awesome location.  We love it so much, we have booked TWO events for 2013…June 21-23, 2013 AND September 20-22, 2013.
